Fall Recipe–Apple Cookies

Once you’ve gone apple picking (or to the farmers’ market) and you come home with a load of apples, what should you do with them before they go bad? There’s always the usual: apple cider, apple butter, apple sauce, apple pie or just eat them raw.
To dress them up a bit, I like to make apple cookie for my daughter. I even sent them with her to school for the class’s Halloween party one year. Do note that my photo and recipe do contact nuts, so be sure that no one is allergic before serving. They can easily be made nut-free, substitutions are noted in the recipe below.

Apple cookies!

  • Medium to large apples sliced through the core
  • Peanut or almond butter (for nut-free substitute sun butter or other nut-free butters)
  • Chocolate chips
  • Coconut flakes
  • Chopped nuts or pumpkin seeds or raisins

​Slice the apples cross-wise (through the middle of the core) and remove any seeds, top with the nut or nut-free butter, followed by your choice of toppings. I think the photo they toppings are Enjoy Life chocolate chip cookies, coconut flakes and roughly chopped almonds. Then they are ready to enjoy!
